Approach
Since the preferences for mods is different for everyone, my UI only tries to fit the most basic needs. You shall be free to add your favourite mods as you like.
Follow the example of vpr, it's exactly about that what I'd like you to do:

:: Installation
Offline
Backup your current UI (as a fallback!) which includes the following folders: Fonts, Interface, WTF
Delete the Fonts, Interface & WTF directories
Unzip the archive into your WoW directory
Open the new WTF folder and go into "Account"
Now rename "YOUR-ACCOUNT-NAME" to whatever your account name is (remember to use caps)
Also rename the "Your-Realm-Name" folder in the Account directory and the "Your-Character-Name" folder in the Realm directory
Note: I included a template for the character folder. You'll find it in the "Additional Files" directory. Use it for your other characters!
Online
Make sure you load outdated addons
Log in to your character (the one which after you renamed the "Your-Character-Name" directory)
Make sure that no UI Scale is set (unmark the checkbox)
Don't display LUA errors: ESC > Interface > Help > Mark the checkbox
Surely you can update you're addons as you like, but keep in mind, that I made some customization to certain folders which will be lost. I will post an up to date compilation-file from time to time.
Important: Do not update SharedMedia! Textures and borders won't be recognized anymore (unless you backup & restore the SharedMedia.lua file & content of the storage folders).
:: Notes
If you'd like to enable/disable party buffs, do the following: [ /pitbull ] > Party > Other > Aura > Enable/Disable Buffs and Debuffs
I wasn't able to configure the action bars stance switch for druids yet because I don't have a druid on an higher level. But there are enough bars for that now.
I don't deliver a Config.wtf with the UI, this means that you have to copy over your old one (to ...\World of Warcraft\WTF) or reset your configuration.
If you have specific key bindings and/or macros, copy back the appropriate files into the new folders. Setting key bindings (also for custom action bars) will always be up to you.
There are two macros delivered with the UI for toggeling Omen and Recount. Drag & drop them to some action bar.
Sometimes PitBull screws up. Just reload your UI and it's fine again.
This Version of Air UI will always have FuBar instead of LibDataBroker.
:: Known Issues
There are some errors when you login due to unupdated addons (if you still display LUA errors).
When you visit the bank, the standart bank frame shows up as well as the Baggins bank frame even if the option to disable that is set.
SatrinaBuffFrame recieved a significant behaviour update. With that I'm not sure yet if I configured everything quite well.
CowTip shows an additional line at the bottom of the unit tooltip which I wasn't able to hide yet.
Bartender is still at the same version as in v1.7. The new one brings more problems than improvements. Don't update to another version!

Hmm, pretty difficult task since chat settings (like colors) are saved server side now unless they are overwritten from a local file.
Try this:
Create a new character and login to it
Logout and exit the game
Go into the character folder (eg: C:\Program Files\World Of Warcraft\WTF\Account\ACCOUNTNAME\RealmName\NewCharacterFolder)
Open the chat-cache.txt file and find the COLORS section
Copy the whole block and paste it into the chat-cache.txt in your other character folders.

Sorry for my late reply. I'm currently in my diploma project and that consumes all my time. I can't tell you exactly what the problem is (I haven't been playing WoW for over a month :/ ) but I'll do an update on the UI today and I hope the new version will fix the bugs.
I really like the UI but im having some issues with it. Every time I relog into WoW, bartender is squished together, and the chat font is smaller. Its getting a bit frustrating fixing it every time I get on. Any ideas?

According to THIS thread which is the Pick of the Week thread here on WOWI - they claim that "Stuf Unit Frame" is a good replacement for Pitbull with equal amounts of customization. I haven't tried it, but I read that and thought of what you said. Maybe you can give it a try.
For castbar, I've been playing with AzCastBar recently... It's actually quite nice.

I'm thinking about PitBull4 (if the author get's it done in time) or else oUF (with an own design). I don't wanna change much about the look, but 2 addons really get annoying. These are PitBull and Quartz. In 25-man raids in boss fights they always break and you have to reload the UI... (not the best thing when the loot is getting handed out ;D )

I just wanted to say this UI is amazing and very well done!
I was wondering though, I am using it on a 1440x900 resolution and everything looks great...but I can't really read any of the texts anywhere. Anyway you could maybe get a 1440x900 release out whenever you have spare time?
