How do I Disable the HUD
 

I see on your website a video with the HUD disabled. But I have gone through all of the slash commands and can not find how or where is disable it.

Never mind i Just found it. :) It is the red button at the top

For the record... I strongly recommend not entirely disabling the HUD. My advice is to use the "Simple HUD" mode and then if you don't want the health bar in it, use the command '/nui hud healthrace' to only turn that one element off.
