For Grid2, the general font setting is more a fallback if a text indicator does not have a font set. So I would look in the text indicators too.

That is indeed odd and alarming; however, I have never seen any such difference with RealUI. Even if I disable nibRealUI, I don't get much higher than 60fps which is about that same as with nibRealUI...

Cast bars can be shown with the options in /knp -> Cast Bars.

There is not currently an option to change the cast bar colors, though I do plan on changing the defaults to provide more contrast.
