The Apple/Command key on an Apple keyboard is the same as the Windows key on a windows keyboard. I use a PC keyboard on my Mac, so when I want to hit Command-M to go to windowed mode, I hit Windows-M.
The only real difference is the additional F keys and the swapping of Alt/Option and Windows/Apple.
