Yeah sometimes just removing the addons is enough. You probably had another addon that wasn't needed anymore.
I'd suggest that you play around with the interface and do your day to day stuff and see what is missing. You should find that you only need to add a few new addons for your personal convenience or raid convenience compared to before nUI.
