You cannot "expand" the recount window while it is in the info panel for a whole host of reasons. Suffice it to say that Recount is locked and parented into the info panel without getting into the painful detail of why you can't zoom the window.
You might consider looking at Skada in lieu of the combination of Recount, Omen and nUI_InfoPanel_DualStats... it does the job of all three in one addon and might solve your problem.
