It would likely be easier to make a list of what you can't customize.
One of the huge goals for nUI6 is to have a GUI tool that allows any user to resign the user interface... so, yes... you can make all of the changes to the unit frames you like (as well as the other aspects of the nUI6 user interface).
In fact, the existing unit frames allow you turn the animation off if you don't like it. If you want to experiment with it, edit the UnitFrame_Player.lua, UnitFrame_Target.lua, UnitFrame_Pet.lua and UnitFrame_ToT.lua files under [ Interface > AddOns > nUI6 > Layouts > DPS ] (they will be in sub directories from there) and look for the "Portrait" sections in each... change "useAnimation = true;" to "useAnimation = false;" then save the file and do a '/nui rl' to see the change.
These are the text based layout files and you're free to play with them. That said, nUI6+ will include a full suite of tools that will let you do the same thing via a GUI interface instead of having to hand edit the layouts.
