Interesting thread idea. I'll bite:

Music: FooBar2000 or AIMP 2
Video: CCCP (Codec Pack) and Media Player Classic
Bittorrent: μTorrent
Browser: Firefox 3, Beta 5 /w extensions
IRC: mIRC
IM: Pidgin
Graphics: The GIMP for most things, Paint Shop Pro 7 (an oldie but goodie) for others
Desktop Customization: Windowblinds, IconPackager, RocketDock
Office: OpenOffice.org 2.1
AddOns updater: jWoWUpdater
Others: 7ZIp, Notepad++, Comodo Firewall Pro

Most of my normal collection of everyday use applications are open source in nature.

Ubuntu 8.4 just finished downloading and needs to get burned to CD so my list is going to change.

Music: Soundbase, winAmp and dbPowerAmp (awsome software)
Video: winAmp
Bittorrent: μTorrent
Browser: Firefox + Addons
IRC: I'm one of the cofounders of Rebelchat, but I've retired
IM: Yahoo (mostly for my boyfriend, otherwise I detest messengers)
Graphics: Adobe Photoshop CS, Paint Shop Pro 8
Desktop Customization: StyleXP, Styler Toolbar, RocketDock
AddOns updater: None. I refuse to use them anymore
Others: WinRar, Prolix (I prefer this to Notepad ++)
Security: PeerGuardian, AVG, AdAware, HiJackThis, special host file

If I was home, this list would be longer.... I can't remember them all atm. I'll prolly edit this when I get home.

I'm in Cali with my sweetie... goin to Disney this afternoon RAWR!!!

Eh, whats the point of using VLC with CCCP if VLC doesn't use any codecs in it/filters?

Likely because VLC can play just about everything that you throw at it. I keep VLC around in the rare occasion that I encounter something that MPC or Zoom Player (w CCCP) can't handle.

Hmm...

Music: WMP or WinAmp (going to have to checkout FooBar though)
Video: WMP (ffdshow codecs)
BT: uTorrent
Browser: Firefox2 (with NoScript)
IRC: Haven't in years but I'd use mIRC
IM: Avoid when possible but MSN or Gmail.
Graphics: The GIMP
Office: OpenOffice 2.4
Editor: UltraEdit32
FTP/Shell: CoreFTP Lite, puTTY, SQLyog
Download Manager: GetRight (via FlashGot)
DVD Burning: ConvertXtoDVD
CD Burning: InfraRecorder or Alcohol 120%

AntiSpyware: WindowsDefender, Spybot S&D
AntiVirus: Used to be a Symantec fan. Used Avast until it got bugged out with WoW. Using AntiVir at the moment.

Lots of other little thing, open sourced when possible...
