If you do not want the minimap to be in the info panel then you need to uninstall or disabled the "nUI_InfoPanel_Minimap" addon. When you log back in you may need to use the '/nui minimap' command to move the minimap from the top right corner of the display back to the center of the dashboard.
As for the HUD... several things... there's a textless version of the HUD you can use which greatly reduces how much information is displayed. You'll find that in the "nUI: Unit Frame Panels" download section. There's also a '/nui hud scale {n}' command you can use to reduce the size of the HUD and '/nui hud hgap {n}' command you can use to increase the distance between the bars. In addition, there's a '/nui hud healthrace' command you can use to disable the health race bar in the center of the HUD which is really only needed with the simple HUD.
Failing all of that... there's a red button at the top center of the display that says "Player/Target" -- click it to cycle through the HUD modes to either "Simple HUD" or "No HUD" -- I do *strongly* recommend using the Simple HUD mode rather than turning the HUD off entirely as there's a lot of important information there... in particular the HOT/DOT bar and cooldown bar as well as casting bars in the field of vision. The health race bar used in conjunction with the simple HUD makes for a very nice display imo.
