Remember that what you click on to hide or show a bar is the Control Box, not the label. Scroll down on your DAB options and you'll find these. From there, it's simple.

You probably have it set to "Fill instead of Empty" or whatever that option is. Uncheck that and your bars will deplete on loss of health/mana as is appropriate.
