I was able to fix my lag issue by disabling Lightheaded (http://www.wowinterface.com/downloads/info7017-LightHeaded.html).

I think that's the case with all UIs. You can't make every player 100% happy, but you can shoot for 99.5% and me I'm 99.9% happy with this UI. It has shrunk my addons folder, given me better FPS...
