Is there a way to hide any quests from my screen that are not in the zone I am in?

If you mean the Blizzard Quest Tracker - yes. Right click the titlebar of the Quest Tracker window, and choose the bottom option (I don't remember the name of the option).

Then I'll move this to the Carbonite forums for you.

At the top of the little quest log window, the second button from the left is called "Priorities." In this list you will see an option labeled "Hide quests not in zone."
