Void Ridge Quest Bug

My gf was playing on her account with nUI on and it was screwing up the Void Ridge quest in Hellfire Penninsula kept deleting the void shards she had and replaced them with the ones she picked up. We turned off nUI and the quested worked fine, so I figured I would let you know.

How did nUI delete the void shards? Can you explain in more detail what was happening?

I should add, I've done that quest on at least four toons with nUI. However, that does not mean there's not a new problem.
