I don't have the freezing problem you describe, but I was having an issue with trying to get the mailbox window to display at all. I guess WoW can only load so many mail messages in one mailbox 'session' and upon reaching this limit and reopening the mailbox to get the next batch, the window would fail to appear.
The sound would play and the character animation would fire, but nothing else would happen beyond that. I'd say that our issues aren't entirely unrelated seeing as it appears when we're both opening mass amounts of mail messages in a single mailbox session.
I'd say just leave Easymail disabled and use Postal. It's a better addon anyways, IMO. We lose the nifty matching button textures for the features in the mail window, but at least it works with lots of messages.
